The prostate cancer foundation says 30-percent of cancers are preventable through lifestyle changes, including eating better. Each day on Fox 4, we'll profile a superfood you can incorporate into your diet. The challenge is called the "Eat It To Beat It."
Today's superfood is acorn squash.
Acorn squash is rich in nutrients like vitamin a, vitamin c, and folic acid.
The squash has beta-carotene that gives acorn squash cancer-fighting power.
You can roast acorn squash and try a variety of toppings.
For a basic, hearty side dish, add olive oil, salt, and pepper.
Or try something a little more adventurous like honey, rosemary, and nutmeg.
