Food truck Friday: Gator John's BBQ

LEE COUNTY, Fla.-- The Gator John's BBQ food truck cooks up southern comfort dishes like brisket and hearty sides.

The truck is owned and operated by John Hulslander. He named the truck Gator John's because all of his kids went to the University of Florida.

Hulslander started off doing backyard BBQ's and then decided to open his own business 3 years ago. He built his truck from scratch, adding a custom smoker to the back of it. 

One of the most popular side dishes is called the redneck parfait. It consists of Fritos, "swamp beans," chopped meat, bbq sauce and coleslaw. Swamp beans is a mixture of 4 different beans; butter beans, dark red kidney beans, chili beans and pinto beans.

The truck also has sandwiches and mac and cheese bites on their menu. Hulslander operates the truck by himself and spends 12-14 hours smoking the meats.
