LEE COUNTY, Fla.-- A food truck in Cape Coral is serving up bold and fresh Mexican flavors.
Chef Hector Cordero is the owner of the Red Roc Cravings food truck. He's originally from Toledo, Ohio but moved to the area because of the weather.
Hector said he developed his love of cooking from his mother and she influenced him to go to culinary school.
He says his business took off and there are now 3 Red Roc Cravings trucks. Cordero says everything is made fresh, nothing is premade. They have tacos, burritos, nachos and more.
Red Roc Cravings mostly caters corporate events, but they sometimes go to other breweries or events around town, like Scotty's Bierwerks in Cape Coral.
They also have vegan and vegetarian options and most of their dishes can be altered.
